 There are so many changes in my life and I become terribly busy now. Next month, new city, new job, I am really excited.

Thanks to this delicious chocolate cake one hour before my final round interview, I have gotten the job 🙂

Teishoku

Sick again, unbelievable. I hadn’t got a cold in 2013 and 2014, but now, I am suffering from my second cold this year! It is February! 

So I decided to stay at home. When I am ill, I want to eat some light food. I like Japanese Teishoku, a kind of meal set with rice (or noodle) and various dishes offered by many Japanese restaurants. Since I don’t want to go out so I cooked my Teishoku with the ingredients found in the refrigerator.

This is my Teishoku, with pan fried flat fish (plaice), stir fried Pak Choi with garlic, omelette roll and rice.

How to pretend that you can cook Asian noodle soup

Instant noodle 1

This Asian ramen noodle soup looks delicious, right? I have cooked several times for my German friends, they all love it!

I will show you how to prepare this noodle soup even if you are not good at cooking at all.

Ingredients for 1 portion:

  • 1 packet instant Shin Ramyun (This one is sooooo popular that you must find it in every Asian shop)
  • 1 tomato
  • 3 shitaki mushroom (or other mushrooms)
  • vegetables like spinach, Chinese cabbage or pak choi
  • 1 egg
  • several slices cooked pork belly or ham (you find them in every normal supermarket.)
  • seaweeds (optional, from Asian shop)
  • Kimchi (optional, from Asian shop. If you like spicy soup, Kimchi would be wonderful.)
  • Spring onion or chives for garnish

Instant noodle 3

  1.  Put tomato, mushroom and Kimchi into 600mL cold water and heat them together.
  2. When the soup boils, add all the contents of the packet Shin Ramyun and cook for 2 or 3 min.
  3. Then add vegetables and seaweeds and cook for another 1 or 2 min.
  4. Fry an egg, sonny-side up. 🙂
  5. Arrange the noodle soup, done!

You can definitely impress your guests with this Asian ramen soup, trust me.

Pomegranate juice

Pomegranate is one of the most healthy foods. Some people enjoy spending time to eat it, but I am not that patient. Juice would be much better for me. If you have a blender, then make your own fresh pomegranate juice, its taste is just amazing!

Teriyaki Salmon

Teriyaki Salmon is a Japanese dish. I marinated the salmon over night in Teriyaki marinade.

For two portions: 

  • 3oo g salmon fillets, with skin
  • Teriyaki marinade: 
    • 2 tbs soy sauce
    • 2 tbs sake or mirin
    • 1 tbs light brown sugar
    • 1 cloves garlic, minced
    • 1 tbs minced fresh ginger

Stir-fry salmon, each side 2~3 min, depending on the thickness of the fillets. Add the marinade and cook with salmon until the sauce got thick. Serve with rice and vegetables.

I have tried two different ways to arrange this dish. I can’t tell which one I like more,  I love  both of them indeed.

Lemon chicken wings

I have tried so many different ways to cook chicken wings, this one is definitively the best. The recipe is a little bit weird, because it is my own creation based on several classical recipes of chicken wings. Perhaps I will make an extra post about it.

The last coffee time with a friend, who left Germany today for good.  I have no idea when and where we can meet each other again but I will miss the joyful moments.

Indian Butter Chicken Masala

I followed the recipe from this site(http://www.cookingandme.com/2013/03/butter-chicken-masala-recipe-indian.html) with tiny adaptation.

Ingredients:

  • 500 gm of chicken upper leg (or 250 gm boneless chicken)
  • 2 onions, minced
  • 4 chilis(optional, because I like very spicy food)
  • tomato, pureed (I only had small cherry tomato, also nice)
  • 1 tbsp of tomato paste or sauce
  • 1 tbsp of butter 
  • 1 tsp of minced garlic
  • 1 tsp of minced ginger
  • 2 tsp of coriander powder 
  • 1 tsp of chilli powder 
  • 1 tsp of garam masala
  • 1 cup of milk
  • 3 tbsp of cream or pureed cashew paste (soak and grind cashew nuts)
  • 1-2 tsp salt (adjust to taste)
  • 1/4 tsp of turmeric powder

(coriander powder, garam masala and turmeric powder from Asian supermarkt)
Butter chicken 1

  • Marinate the chicken pieces in ginger, garlic, turmeric, and chilli powder for 30 min
  • Heat the butter in a pan and add the minced onions. Fry until golden brown
  • Add the ginger, garlic, coriander, chilli powder, turmeric, and salt. Fry for a minute until fragrant
  • Add the pureed tomato and tomato paste and cook for 3-4 mins until the mixture bubbles uniformly
  • Thrown in the chicken. Cook covered for 8-10 mins until the chicken is soft. The chicken will let out more water, just check once or twice in between and give the curry a stir. Keep the flame on sim
  • When the chicken is cooked soft, open the lid and cook for a further minute or two. If the gravy is too thick, add some water at this stage
  • When done, add the garam masala or chicken masala and the cream or cashew paste. Give it a good stir, but don’t boil
  • Adjust salt, garnish with the coriander leaves, and remove from fire
  • Serve hot with tawa naan, vegetable pulao, or jeera rice

 

Fresh figs meet Iberian ham (Jamón Ibérico)

Sweet fig + salty ham is a very nice combination. You don’t even have to be able to cook to prepare this wonderful appetiser, it is just so easy.   

For 1 portion:

  • 2 ripe fresh figs
  • 2 slices Iberian Ham (Jamón Ibérico)

Arrange the plate as you like, using your creativity.

Asian cuisine – rice stuffed squids

Rice stuffed squids

INGREDIENTS: 

  • Squid
  • Cooked rice
  • Kimchi (optional, or other vegerables like mushroom), onion, garlic
  • Soja sauce
  • Rice wine or sake
  • Lemon leaf (optional)

RECIPE:

  • Take the skin and innards of squids off/out, and clean them thoroughly with water. 
  • Blanch squids for 1 min.
  • Cut kimchi, onion and garlic into small pieces and fry with rice. Flavour with some salt.
  • Fill the squids with rice gently, not too full, 90% should be ok, as rice will gain in volumn during cooking. Otherwise too much rich will break the squid.
  • Seal the squid with a wooden toothpick.
  • Fry the stuffed squids for 1 or 2 minutes and add water, rice wine, soja sauce, lemon leaves.
  • Stew until squids fully cooked, take them out.
  • Cut them into small pieces and serve with green vegetables.
